Cavalieri Assyrtiko by Nico Lazaridi is a highly-rated, single-varietal Greek white wine produced in the PGI Drama region of Macedonia, Greece. Part of the winery's dynamic "Cavalieri" series—named to honor the Lazaridis family receiving an honorary knighthood title from the Italian Republic—this wine showcases the famous native Assyrtiko grape grown in low-yield vineyards.

• Stainless Steel: The majority of the wine undergoes controlled alcoholic fermentation at 12–17°C in stainless steel tanks to preserve fresh fruit characteristics.
• Oak/Acacia Barrels: Roughly 20% of the wine completes its fermentation and undergoes 6 months of aging (sur lie) with regular battonage (lees stirring) in oak or acacia barrels to add volume, structure, and creamy complexity.

• Aroma: A combination of intense citrus (peeled lemon, lime), stone fruits (peach, pear), white floral notes (jasmine), and subtle hints of botanical tea leaves, vanilla, and butter.
