Wine Profile & Composition.

• The Blend: A sophisticated Bordeaux-style blend dominated by Cabernet Sauvignon (typically 60%) and Merlot (30-40%). Depending on the specific vintage, small percentages of indigenous Mavroudi or Italian Sangiovese (around 10%) are added to introduce unique finesse and regional character.
• Vinification & Aging: Crafted using classic red vinification techniques with délestage (rack-and-return) to maximize flavor and color extraction. It is matured for 12 months in oak barrels to soften its structure and build layers of complexity.
• Alcohol Content: Usually hovers around 14% to 14.5% ABV depending on the harvest year.

• Appearance: Deep ruby-red color with intense legs.
• Aroma: A powerful, multi-layered bouquet featuring ripe black fruit (plum, blackberry), dried prunes, dark chocolate, and mocha, complemented by savory hints of smoke, leather, and sweet baking spices like cinnamon.
• Palate: Full-bodied, well-structured, and velvety. It displays medium acidity and firm but highly polished, elegant tannins, culminating in a persistent, fruit-forward, and slightly spicy finish.

• Dishes: Perfectly suited for hearty culinary creations. It pairs beautifully with grilled ribeye or t-bone steaks, roasted lamb, venison, rich red stews (like Greek kokkinisto), and wild game served with complex, savory fruit or spice reductions.
• Serving Temperature: Best served at a standard cellar temperature of 16°C to 18°C. Decanting for about 30 to 45 minutes before serving is highly recommended to let the oak and dark fruit aromas fully unfold.
• Aging Potential: This wine possesses excellent structural longevity and can evolve beautifully in the cellar for 6 to 8 years post-vintage.
