PDO Dafnes (Protected Designation of Origin)

Our winery was one of the first to believe in the potential of Liatiko for the production of excellent sweet wines. We believe that PDO Dafnes sweet wines are a very strong trump card for the Cretan vineyard! We started sunbathing grapes for the production of sweet wine just before we built our winery. This wine is for us the driving force, the one that somehow reflects us. It has the same 'age' as 'Idaia' and symbolizes our timelessness, our patience and our perseverance. It combines maturity, as we did with the first generation, with freshness, in our case, the new generation. It evolves beautifully over time and rewards us!
Medium intensity garnet color with brick shades. Extremely complex aromas of dried fruits such as fig and apricot, spoonsweet grape and grape molasses, honey, chocolate and vanilla. Its taste is sweet and very concentrated with incredible thickness, silky tannins, wonderful acidity that binds all the elements harmoniously, refreshing the palate, and its aftertaste very long and jammy.
It ages for at least 4 years in oak barrels and many more years in the bottle, while it has the potential to evolve in the bottle for many more decades.

Bitter chocolate and chocolate desserts, sweets with nuts, dark fruits, caramel and coffee, dried fruits, with varieties of intense cheeses, fine cigars.

Aging: 10-20 years
Serves: 12- 14°C.
Vineyard: An east-oriented dry vineyard in Venerato in Malevizio, Heraklion.
Altitude: 400-500 meters
Yield: 600-700 kg/acre
Climate: Mild winter, cool summer
Harvest: September 5-15
Vinification: Sun-drying of the grapes for 8 days in spreaders. This is followed by red vinification with extraction at 30ºC and fermentation.
Maturation: 4 years in oak barrels of 225lt.
