Dry red
The indigenous Mandilari grape meets the cosmopolitan Syrah in a wine that expresses the winemaker's patience and patience for perfection. It is produced only in the excellent years and keeps it in the winery until it unfolds its full character, even if it takes many years. It matures for many months in oak barrels and for a few years in the bottle to reveal its complex bouquet and 'soften' the tannins, while at the same time it has the ability to maintain its freshness.
Deep red color with violet tones. Complex aromas of dark fruits dominated by sour cherries and blackberries are combined with notes of pepper, vanilla, cigar, chocolate and leather. Rich in taste with robust but refined tannins, a very nice balance between acidity, alcohol and dense fruit and a lasting spicy aftertaste.

Red meats grilled or stewed with dark sauces, slow-cooked game, meat pies, pasta with mushrooms or minced meat, cold cuts platters and mature cheeses.

Aging: 8-10 years
Served: at 15-18°C.
Vineyard: With a northerly orientation in the Dafnes zone in the area of Venerato in Malevizio, Heraklion. Clay-calcareous soil.
Altitude: 400-500 meters
Yield: 600 – 800 kg/acre
Climate: Mild winter, cool summer
Harvest: 5 – 20 August
Vinification: Classic red vinification by fermentation at 26ºC in temperature-controlled tanks.
Maturation: 12 months in oak barrels
